The foundation of Pork & Mindy’s is based on passion. Founder Kevin Corsello was on a long drive and feeling homesick for quality BBQ, when he dreamed of combining three of his passions: food, music and art, or as he calls it, “The Holy Grail” of experiences. Realizing that there were no fast-causal BBQ restaurants in the world, he decided to take his hobby to the next level and called his long-time friend Jeff Mauro, Emmy-Nominated Celebrity Chef.  It was an immediate melding of the minds for two Italian kids from Chicago who are happiest behind a grill or slow-smoker enjoying great food along with friends and family. Together they began shaping a vision for a brand that at its core would do what food, music and art have always done: bring people together.

After months of planning it all out, Pork & Mindy’s was born.  All of the food is meticulously crafted to create complex, one-of-a-kind flavor profiles using natural and simple ingredients. All of the meats are slow-smoked to create the perfect texture and layered with sauces and unique toppings to make sangwiches you simply can’t find anywhere else. Whether it’s a take on classics or inventions all of their own, they believe in creating food that makes your mouth water, without cutting corners. All the meats are free of hormones and antibiotics, and come from animals raised organically on Midwestern family farms with the highest level of animal welfare and humane practices. Executive Chef Jeff Mauro, the Food Network’s Sandwich King, Brings His Culinary Prowess to Create the Pork & Mindy’s Menu, Lead Retail Product Development and Brand Promotions

After a few years in Hollywood, Jeff Mauro upped the ante and enrolled in the Le Cordon  Bleu culinary program to refine his cooking skills. Jeff graduated valedictorian,  packed and returned to Chicago, where he taught cooking lessons, was a  successful private corporate chef and sandwich artist, and performed on stage  during the weekends. He won Season 7 of Food Network Star and is the host  of the Emmy-nominated series Sandwich King. He’s also a co-host on The  Kitchen. Jeff lives in Chicago with his wife, Sarah, and their son, Lorenzo, and  Jeff’s favorite color is pastrami.
